CORNISH SMOAKIES
Cornish Smoakies produce traditional Oak smoked food. Oak is indigenous to Cornwall unlike beech that is widely used for smoking elsewhere. Combined with our smoking process the Oak produces a mild subtle flavour that does not mask the taste of the food and yields products that are unique.
Our fish are locally caught from an environmentally responsible fishery and are smoked whilst fresh and at their best. The process is entirely traditional with no dyes or other additives used. The ingredients are just fish, salt and genuine oak smoke.
They are smoked with a combination of cold and hot smoke so that the final product is still moist but cooked. Finally they are vacuum packed to retain their freshness. They can be eaten hot or cold, used as a cooking ingredient or frozen for later consumption. The process is time and labour intensive but produces wonderfully authentic tasty delicacies.

CHRIS'S PRESERVES
Chris specialises in small batch hand made preserves based on the principle of “I will only sell it if I like it”
A range of Marmalades, Jams, Chutney and old fashioned Piccalilli are available throughout the year: as many of the ingredients are sourced as locally as possible. Chris has set aside an area of land purely for blackberries which are not spayed and receive no artificial fertilizers. The raspberry bed contains varieties grown for flavour not quantity. All the soft fruit grow on well drained south facing acid soil.
Chris’s Preserves are available through Penzance Country Market, (Thursday): Helston Country Market, (Friday): Helston Farmers Market, (Saturday) and various specials such as Helston Motor Show.

SPECKLED BANTAM CHUTNEY
Emma Turley is a regular at farmers' markets in West Cornwall with her range of jams, chutneys and preserves, as well as making a fantastic assortment of cakes, muffins and cookies! The chutneys and jams are also available from Emma's farm gate stall on the main Helston to Falmouth road just outside Trewennack.

The Cornish Hen Deli is one of Penzance's most popular cafes and specialist food shop. Famous for homemade pasties and tarts, the deli is owned and run by Sarah Shaw.
The Cornish Hen Deli first opened its' doors in 2008. All the cakes, tarts, pies and pasties are freshly baked on the premisesevery day! As far as possible there is a Cornish versionof every in the shop.

Our honey product range is all made in Cornwall and all the specialist honeys and comb products are as made by the bees with no processing or blending.
